When the word cookies comes up, most people think of a sweet dessert rather than a healthy breakfast. However, the truth is, ours are packed with energy, healthy nutrients, and are perfect for breakfast.
And how is that possible?
Our breakfast cookies are made with rolled oats,roasted almonds , nut butter , dried fruit , coconut oil, and ground cinnamon. These ingredients will give you the protein, carbs, and fiber you need in the morning. The cookies can be sweetened with maple syrup, agave syrup, or honey.
They take about 25 minutes to prepare and make about 6 servings.

What will you need?
- 1 and a half cups of oatmeal
- ¼ cup almond flour or ground almonds
- 2 or 3 tablespoons of organic coconut oil
- ¼ cup pumpkin seeds
- ¼ cup choppedroasted almonds
- ¼ cup sesame seeds
- 3 tablespoons chia seeds
- ¼ cup dried cranberries (you can also use chopped dried apricots )
- 100g chopped dark chocolate
- 1 teaspoon ground cinnamon
- A pinch of salt
- ½ cup maple syrup
- 1/3 cup 100% almond butter
- ½ teaspoon vanilla extract
- 1 egg
- 100g white chocolate
How to proceed?
- Preheat the oven to 175°C.
- Prepare two medium-sized bowls. Mix all the dry ingredients in one and all the wet ingredients in the other.
- Mix all the ingredients and then shape the cookies with your hands and place them on a baking sheet.
- Bake the cookies for 12-14 minutes and let them cool completely after baking.
- Meanwhile, melt the white chocolate and pour it over your cookies.
- Enjoy your meal.
