Our peanuts are grown for us by a local Greek farmer who has his orchards north of Athens. The local climate, year-round conditions and high-quality soil provide excellent conditions for their growth. The farmer delivers them to us in a raw state (RAW), without a shell, but also with a peel. It is the peel that gives the peanuts their unmistakable taste and preserves important nutritional values. Peanuts are not actually nuts but a legume, also called groundnut, and so raw peanuts are not very tasty (they are more reminiscent of raw peas). That is why thorough and relatively long roasting is necessary to achieve a distinctive peanut taste and aroma. Of course, like all our nuts, peanuts are roasted only with a stream of hot air, without the use of fat. This prevents them from burning or other deterioration.
