Ingredients
- 1 kilogram of zucchini cut into 1cm rounds
- 3 tablespoons olive oil
- 3 small cloves garlic
- 10 mint leaves
- 5 basil leaves
- 1 large spoon of washed capers
- 2 tablespoons pine nuts , lightly toasted
- 1 or 2 teaspoons of any vinegar you have available
- Salt and pepper to taste
- Extra mint and basil, if desired (optional)
- Ricotta and bread, if you like (optional)
INSTRUCTIONS
1. Put 1 tablespoon of olive oil in a frying pan. Heat it over medium heat.
2. Place half of the zucchini in the pan. Roast, turning every few minutes, until golden brown. This will take about 15 minutes. Don't add salt yet!
3. While the zucchini is baking, chop the garlic, mint, basil, and capers together until well mixed.
4. Remove the baked zucchini from the pan and bake the other half in the same way, using another tablespoon of oil. Add more oil if needed.
5. Put the first portion of zucchini back into the pan. Add the garlic-herb mixture and vinegar, stir, then add a little salt and pepper.
6. Add the pine nuts and place everything on a plate.
7. If desired, sprinkle the top with extra herbs just before serving.
You can serve with ricotta and fresh bread.
