To make it, you'll need 100% cashew butter, coconut milk, a few tablespoons of maple syrup, and roasted cashews. You'll also need a blender or food processor, and some time to chill.
This ice cream is vegan and everyone can taste it without any problems.
It is suitable for both adults and children. However, be careful of the calories. Although at first glance this ice cream looks healthy, it contains a higher amount of calories and fat from the cashew butter and coconut milk.
How can you make ice cream like this at home?
Simple vegan ice cream with cashew butter.
What will you need?
- 400ml (1 can) coconut milk with 15-17% fat
- 100g 100% cashew butter
- 3-4 tablespoons maple syrup (you can also use agave syrup)
- 50g cashew nuts
How to proceed?
- Pour the coconut milk and maple syrup into the tall container of a food processor or blender. Add the 100% cashew butter and blend for about 1 minute. You should end up with a thicker cream. Since coconut milk is very similar to whipping cream, be careful not to overmix and end up with a thick coconut cream.
- Pour the cream into a bowl or freezer container and place it in the freezer for 1 hour.
- Meanwhile, roast the cashews in a dry pan, let them cool, and then chop them finely.
- After an hour in the freezer, your ice cream should be slightly frozen. Add the roasted and chopped cashews and mix gently with a spoon. If you add chopped cashews to ice cream immediately after blending, the cashews will fall to the bottom of the container.
- Place the ice cream back in the freezer for about 5 hours or even overnight.
- For best results, it is a good idea to remove the ice cream from the freezer about 30 minutes before serving.
