Chicken strips with macadamia nuts (suitable for paleo, Whole30 and keto diets)

Chicken strips with macadamia nuts.

Ingredients
- about 750g chicken breast, cut into strips
- 1 1/4 cups roasted, unsalted macadamia nuts , ground to a flour-like consistency
- 1 cup fine almond flour (you can substitute with regular flour)
- 50g grated Parmesan (you can also use Grana Padano cheese)
- 2 large beaten eggs
- a pinch of sea salt
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 2-4 tablespoons of olive oil
Instructions
1. Prepare the chicken: Sprinkle the chicken breasts generously on both sides with sea salt, pepper, garlic powder, and onion powder. Set aside.
2. Prepare the nut mixture: In a food processor or blender, pulse the macadamia nuts until they resemble coarse crumbs (be careful not to turn them into nut butter). In a shallow bowl, combine them with the almond flour, grated Parmesan cheese, and mix well with a fork.
3. Prepare the egg mixture: In another shallow bowl, whisk the eggs with 1 tablespoon of water.
4. Coat the chicken: Dip each chicken piece first in the egg and then in the nut mixture to coat thoroughly. Set aside.
5. Place a large skillet (preferably cast iron or stainless steel) over high heat for two minutes. Coat the bottom of the skillet with olive oil.
6. When the oil is hot, add the chicken cutlets and fry as you would regular cutlets. The chicken should be golden brown, crispy and cooked through when removed from the pan.
7. Serve the macadamia nut-coated chicken strips with salad and dip. Tartar sauce goes very well with them.
