Today we have prepared a very simple stir-fry with chicken and cashew nuts. It takes about 30 minutes to prepare and makes enough for 4 servings.
And what does stir-fry actually mean?
Stir-fry is a very old Chinese cooking technique that first appeared around 200 BC. Stir-frying involves frying food in a wok with a small amount of oil at a very high temperature. This allows the meat, tofu, fish or vegetables to cook quickly, leaving them juicy on the inside and crispy on the outside.
Most stir-fry dishes are served with rice or rice noodles.
A simple stir-fry with chicken and cashew nuts.
What will you need?
- 3 tablespoons cornmeal
- ½ teaspoon salt
- A pinch of ground black pepper
- 1 whole red pepper
- 500 chicken breasts
- 2 tablespoons sesame or peanut oil
- 1 tablespoon olive oil
- 1 medium broccoli
- 3cm piece of fresh ginger
- 1 cup edamame
- 2 cloves of garlic
- 1 cup cashew nuts
- 1 small bunch of spring onions
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
How to proceed?
- Cut the chicken breast into 2 cm cubes, place in a bowl, add cornmeal, salt, black ground pepper and mix well.
- Peel the garlic and ginger and chop them finely. You can also grate the ginger. Cut the broccoli and red pepper into smaller pieces.
- Heat a large frying pan (or wok) and add olive and sesame oil. After a while, add the chicken breasts to the pan and fry until golden brown.
- Now add the chopped garlic, ginger, red pepper, broccoli, edamame, and cashews. Mix everything well and fry for about 5 minutes.
- Meanwhile, mix the soy sauce, honey, and rice vinegar in a small bowl.
- Once the vegetables and chicken breast are done, add the sauce to the pan and mix well. Finally, add the chopped spring onions.
- Serve the stir-fry with rice or rice pasta.
