You only need a few ingredients for this sauce, but its base is good quality peanut butter . You will also need lime, maple syrup, and soy sauce.
And how can you eat this sauce?
I like it best with roasted sweet potatoes and pomegranate. However, you can also add it to a salad with roasted chickpeas and quinoa, to an Asian noodle soup, Pad Thai, or just to dip RAW root vegetables.

If you want to make this sauce with baked sweet potatoes at home, follow these steps.
What will you need? (2 servings)
- 2-3 medium sweet potatoes
- 1 pomegranate
- 1 tablespoon fresh parsley
- 2 tablespoons Extra Virgin olive oil
- Himalayan salt and ground black pepper
- 3 tablespoons peanut butter
- 2 tablespoons soy sauce
- 1 lime
- 2 tablespoons maple syrup
How to proceed?
- Peel the sweet potatoes and cut them into medium-sized pieces. Line a baking sheet with parchment paper, spread the sweet potatoes on it, and drizzle with olive oil. You can also use foil, but it often sticks to the sweet potatoes, so I don't recommend it for baking. Bake in a preheated oven at 200°C for about 25 minutes.
- Meanwhile, make the sauce. In a bowl, mix together the peanut butter, maple syrup, and soy sauce. If the sauce is too thick, add a little warm water. The sauce should be smooth and the peanut butter should be well blended. Add the lime juice at the end.
- Arrange the baked sweet potatoes on a plate, add pomegranate seeds, chopped parsley, season with salt and ground black pepper, and pour over the peanut sauce.
