Pumpkin hummus with peanut butter.
Hummus is one of those dishes that is very tasty, healthy and takes very little time to prepare. Okay, if you cook chickpeas at home, it takes a little longer. But otherwise, the preparation from start to finish will take you a maximum of 10 minutes.
This dish comes from the Middle East, where it is one of the most popular dishes. True hummus is made from chickpeas, Tahini (sesame paste), garlic, and lemon juice. It is usually served with pita bread and some side dish. For example, with cucumbers, falafel, sliced tomatoes, parsley or coriander, caramelized onions, grilled mushrooms, olive oil, olives, or pine nuts.
Although classic hummus is very tasty on its own, we decided to use something different in this version. In addition to pumpkin puree (recipe below), we also added peanut butter. Thanks to the peanut butter, the hummus became very creamy and its resulting taste was oriental-nutty.
And how can you prepare this hummus at home?
Pumpkin hummus with peanut butter – recipe.
What will you need?
- 400g cooked chickpeas (humus tastes best if the chickpeas are peeled)
- 250g pumpkin puree (homemade or canned)
- 1 tablespoon of good quality Extra Virgin olive oil
- 1 tablespoon peanut butter
- ½ peeled garlic
- 1 teaspoon curry powder
- ½ teaspoon cumin (not regular cumin)
- ½ teaspoon cayenne pepper
- ½ teaspoon ground turmeric
- Himalayan salt and ground black pepper
How to proceed?
- If you want to make pumpkin puree at home, follow these steps. Cut the pumpkin into strips, place on a baking sheet and bake in a preheated oven at 180°C for 30 minutes. Remove the soft flesh from the baked pumpkin and blend with a blender until smooth. You can also freeze such a puree.
- Place the cooked chickpeas in a blender and add the olive oil. Blend until you have a smooth paste. If the chickpeas start to stick to the side of the bowl, feel free to scrape them off with a spoon.
- Now add the pumpkin puree, peanut butter, half the garlic and all the spices.
- Blend for 1-2 minutes, or until smooth. If you think your hummus is too thick, feel free to add a little more olive oil.
- Season the hummus with salt to your taste and add a pinch of black pepper.
- Serve with pita bread and a side dish of your choice.
Enjoy your meal.
