Ingredients:
- 500g chicken breast
- 200ml coconut milk
- 150g almond butter
- 1 teaspoon green curry paste
- 1 teaspoon ground red pepper
- a pinch of salt
- a pinch of ground black pepper
- 2 teaspoons fresh lemon juice
- olive oil
Procedure:
In a large bowl, add the coconut milk, almond butter, a teaspoon of green curry paste, red pepper, salt, black pepper, and a little lemon juice. Mix well and set aside half for later.
Marinate the chicken, cut into medium-sized pieces and skewered, in the other half. Leave the meat in the marinade for at least 15 minutes.
Heat the olive oil in a frying pan and add the chicken pieces. Fry for about 3-4 minutes on each side until the meat gets a nice brown color.
Then serve the meat on a plate and pour over the rest of the marinade that you previously set aside.
We recommend a fresh vegetable salad as a side dish.
