Banana-oatmeal pancakes with nut butter

Since this is one of the simplest recipes we know, anyone can make it. And it's definitely worth trying, because few things can be sweet, tasty, and healthy at the same time :)
Place the oatmeal in a medium-sized bowl and pour water over it until it is completely submerged. Leave it there for at least a few minutes (ideally overnight), then add one raw egg, a chopped banana, and blend with a hand blender for a few moments until it is slightly runny.
Heat the coconut oil in a frying pan and gradually add the blended mixture with a ladle in the amount that you prefer, depending on how big the pancakes are. Fry them for a while on each side and then remove them to a plate. Put a little nut butter between each layer, you can use different amounts for each layer, according to your own taste.
Once all the pancakes are done, add more nut butter on top, drizzle with melted dark chocolate, and garnish with fruit of your choice. We recommend raspberries, blueberries, or a mix of forest fruits.
A super-quick breakfast that will make you look better and better every day. :)

- nut butter (we used Almond with Coconut )
- coconut oil
- high-quality dark chocolate (min. 74%)
- fruit
