Our peanuts are grown by a local Greek farmer whose fields are located north of Athens. The region's favorable climate, fertile soil, and ideal growing conditions produce peanuts of exceptional quality. The peanuts are delivered to us raw (RAW), shelled but with their natural skins intact. The skins not only give the peanuts their distinctive flavor but also help preserve many of their valuable nutrients. Although commonly referred to as nuts, peanuts are actually legumes (Arachis hypogaea). In their raw form, they have a mild flavor that resembles fresh peas more than roasted peanuts. This is why careful, relatively slow roasting is essential to develop their rich nutty aroma and characteristic taste. Like all of our nuts, our peanuts are roasted using only hot air—never oil. This gentle roasting process ensures they are evenly roasted without becoming burnt or losing their natural quality.
