Macadamia Crusted Chicken Strips

Ingredients
- Approximately 750 g (1½ lb) chicken breasts, cut into strips
- 1¼ cups roasted, unsalted macadamia nuts, finely ground to a coarse flour consistency nesolených makadamových orechov, rozomletých na konzistenciu podobnú múčke
- 1 cup finely ground almond flour (or all-purpose flour if preferred)
- 50 g (about ½ cup) grated Parmesan cheese (Grana Padano also works well)
- 2 large eggs, beaten
- A pinch of sea salt
- ½ tsp onion powder
- ½ tsp garlic powder
- 2–4 tbsp extra virgin olive oil
Instructions
1. Season the chicken. Generously season the chicken strips on both sides with sea salt, black pepper, garlic powder, and onion powder. Set aside.
2. Prepare the coating. Using a food processor or blender, pulse the macadamia nuts until they resemble coarse breadcrumbs. Be careful not to over-process them into nut butter. Transfer to a shallow bowl and combine with the almond flour and grated Parmesan, mixing well with a fork.
3. Prepare the egg mixture. In a separate shallow bowl, whisk the eggs together with 1 tablespoon of water.
4. Coat the chicken. Dip each chicken strip into the egg mixture, then coat thoroughly in the macadamia mixture, pressing gently to help the coating adhere.
5. Heat the pan. Preheat a large skillet—preferably cast iron or stainless steel—over medium-high to high heat for about two minutes. Add enough olive oil to lightly coat the bottom of the pan.
6. Once the oil is hot, add the chicken strips and cook until golden brown, crispy, and fully cooked through, turning as needed. The internal temperature should reach 74°C (165°F).
